My Best Gluten Free Low FODMAP Pie Crust

This pie crust is simple, the best I have ever made, and it is truly an astonishing way to start the holidays off with the right pie crust. This gluten free low FODMAP pie crust is easy to make and sure to impress.
I follow a paleo gluten free diet that sometimes needs me to be creative when I want deserts. So, I challenged myself to make the best pie crust that beats any store bought brands.
The recipe is easy to follow and has all the gluten free ingredients, and also qualifies for those on the low FODMAP diet. I have also added some vegan alternative ingredients as substitutes if you would like to add those in.
Low FODMAP Gluten Free Pie Crust

Ingredients
- 1 Cup of white rice flour
- 1 Cup of oat flour
- 1 Cup of potato starch
- 2 TBSP of brown sugar
- 3/4 cup of Ghee or *Balance Butter if vegan
- 2 Egg Yolks *Vegan Substitute 2 aquafaba eggs
- 1/4 Cup milk or *Oat Milk if vegan
- 1 Tsp of apple cider vinegar
Instructions
- 1. Place the flour (Rice, oat & potato starch) into a mixing bowl. Add in the sugar
- 2. Melt the butter and then add it to the mixing bowl of flour.
- 3. Add the egg yolk (aquafaba), milk and vinegar to the mix and stir with a spoon or mixing tool. Please ensure all the flour is wet and the dough is smooth.
- 4. Place the dough in the fridge for 1/2-1 hour
- 5. Take the dough out and now place it on a piece of parchment paper with a light coating of rice flour to ensure the dough does not stick.
- 6. Roll the dough out on the paper to flatten to about 1/4 inch
- 7. once the dough is flat, take it and place the dough into a lightly buttered pie pan and flip the paper with the dough on it into the pan and press down firmly to the bottom of the pan.
- 8. Remove the paper from the pie crust. Next with your hands make sure the crust fits into the pan and the edges you can press down on top with a fork. Be sure to remove excess dough that hangs.
